Napkin Math
Let’s run the numbers.
The arithmetic
Rough estimate
| US retail beef consumed annually | ~19 billion lbs |
| Ground beef share of consumption | ~45% |
| Daily ground beef | 19B × 0.45 ÷ 365 = 23M lbs |
| Quarter-pound patties per day | 23M ÷ 0.25 = 92M patties |
| Raw patty thickness | ~0.75 inches |
| Total stack height | 92M × 0.75 = 69M inches |
| Convert to miles (63,360 in/mi) | 69M ÷ 63,360 |
| Tower height | 1,090 miles |
Why this matters
The scene is a tower of patties. The market is the 2 PM print.
Ninety-two million daily hamburgers do not actually stack. They scatter across 200,000 restaurants and 150 million household kitchens. But the aggregate flow is real, and it meets the market at a single daily moment: 2 PM Central, every weekday, when USDA-AMS publishes the boxed beef cutout.
The boxed beef cutout is the composite wholesale price of beef in dollars per hundredweight (cwt), computed from thousands of actual packer sales in the preceding 24 hours. Choice cutout, Select cutout, and the Choice-Select spread are all published. It is the single most-watched price in the US beef complex.
Every live cattle desk watches the 2 PM release. When Choice cutout rises $10 per cwt and cash cattle hold, packer margin per head improves by about $84. On an 840-pound carcass, 8.4 cwt times $10 is the arithmetic.
USDA-AMS, National Daily Boxed Beef Cutout and Boxed Beef Cuts
Packer margin is cutout minus cash cattle minus plant cost. The Big 4 publish none of this directly, so traders back it out from the cutout print. When cutout stays elevated for four weeks or more, political pressure follows: Congressional hearings on packer concentration, DOJ competition investigations, and periodic Fair Cattle Marketing bills.
For a Live Cattle trader, the 2 PM release is the most actionable scheduled event of the day. The question is a thought experiment. The 2 PM print is a daily cash register.
