OBJECTIVE

The USDA grades beef quality into categories based on marbling and maturity: Prime, Choice, Select, and lower. Choice and Select together account for the vast majority of fed-cattle production. Choice is higher-marbled (more intramuscular fat); Select is leaner. Retail and foodservice buyers pay a premium for Choice product, with the Choice-Select spread published daily by USDA AMS in the boxed-beef cutout report. When the Choice-Select spread widens, consumer and foodservice demand for higher-grade beef is firm. Historically this coincides with strong forward LC prices as the demand pull transmits through packer bids for high-grading cattle. When the spread narrows, consumer trade-down toward leaner Select grades is signaling demand softening — forward LC pressure builds. This signal reads the daily Choice-Select spread, z-scores on a 504-day (two-year) rolling window, and bounds with tanh. State thresholds plus or minus 0.2 (moderate) and plus or minus 0.5 (extreme). In September 2019 the signal pinned saturated-positive at composite +0.95 with LC at 94.20 cents per pound through the pre-ASF demand-pull window; LC rallied 28 percent over the next sixty days. In January 2020 the signal fired at -0.93 with LC at 126.73 as the pre-COVID high-supply environment compressed the spread; LC crashed 34 percent over sixty days. The memorable twist: Grade C+ with daily IC +0.033 at p=0.002 (marginally significant). Non-overlapping independence test at p=0.83 (not significant). Phase +1 (Wide Spread) delivers +1.82% fwd60d (+0.80 pp edge). Weakest-IC member of the LC fundamental stack but provides demand-grade coloration. What this measures

The signal pulls USDA AMS Choice boxed-beef cutout and Select boxed-beef cutout daily values (from LM_XB459 equivalent), computes the Choice minus Select spread per hundredweight, z-scores on a 504-day (two-year) rolling window with 60-day minimum sample, and bounds with tanh. State thresholds plus or minus 0.2 (moderate) and plus or minus 0.5 (extreme). Daily USDA release.

Why it matters

Why Choice-Select spread reads beef-grade demand

USDA grades beef quality into Prime, Choice, Select, and lower categories based on marbling and maturity. Choice and Select together account for the vast majority of fed-cattle production. Choice is higher-marbled (more intramuscular fat); Select is leaner. Retail and foodservice buyers (restaurants, institutional buyers) pay a premium for Choice product; the premium magnitude varies with demand conditions. Wide Choice-Select spread = foodservice paying up for higher-grade product = demand firm. Narrow spread = consumer trade-down to leaner Select = demand softening. The signal reads the daily USDA AMS boxed-beef cutout spread directly.

Why Grade C+ with weak independence

Daily Spearman IC against LC fwd60d is +0.033 at p-value 0.002 across 9,241 observations — marginally significant. Non-overlapping (every-60d) independence test at p-value 0.83 across 155 independent samples — not significant. Phase +1 (Wide Spread) delivers +0.80 pp above baseline at 62.8% hit rate — modest edge. This is the weakest-IC member of the LC fundamental stack but provides demand-grade coloration that other signals do not capture. Treat as overlay, not standalone driver.

How to use this signal today

Pair with the LC-corn ratio signal (feedlot-margin primary driver), FC-LC spread (replacement-cost signal), commercial positioning (hedge regime), Korea and Japan export signals (demand-pull), USDA cattle-on-feed (supply confirmation). Choice-Select is a demand-grade overlay that colors the demand side with grade preference. The current firing is early-stage; monitor for strengthening into EXTREME POS.
