OBJECTIVE
When beef prices rise sharply year over year, retail buyers at the grocery counter, the restaurant chain, and the Mexican import warehouse quietly shift toward pork at the margin. The retail cross-price elasticity between beef and pork sits around 0.15 to 0.30 in the standard USDA elasticity work. Not high. Enough to matter. On May 16, 2022, as the US cattle supply tightened after the 2021 drought liquidation and front-nearby live cattle rallied through 143 cents per pound, the composite entered its expensive-beef regime at -0.891 and lean hogs rose 38.4 percent over the next 60 trading days as the retail demand pull compounded with the pork-export recovery. On March 9, 2021, as the post-pandemic beef cycle extension resumed, the composite registered plus 0.585 and lean hogs rose 37.1 percent as classical substitution reasserted itself. Today the composite reads -0.891 as of Oct 30, 2026, in Moderate-Negative state 84 trading days running. Here is the twist. This signal is directionally correct but modest in magnitude. The expensive-beef state has delivered mean lean hog forward 60-day returns of plus 0.58 percent, only 0.33 pp above baseline. The cheap-beef state has delivered plus 0.15 percent, essentially flat. Retail protein substitution is real, but at the futures-price level it is diluted by feed-cost shocks that hit both markets simultaneously and by slow retail pass-through. Read on for three cases that frame how to read this signal, the state-conditional evidence that back-tests the modest edge, and the four caveats including why the 2020 pandemic readings should be set aside.
LIVE CHART
34 years of the beef-pork substitution signal, read through the live cattle year-over-year z-score.
The composite is in a Moderate-Negative regime at -0.891. Live cattle’s year-over-year rate of change has moderated materially after the 2025 breakout, and the signal reads this as a reduced-substitution-pull regime. The 84-day persistence crosses the stability threshold. Historical fires in the Expensive Beef extreme have anchored on 2014-H2 (record cattle), 2022-H1 (post-drought cattle tightening), and 2025-H1 (cattle breakout).

STATE AND HISTORY
Moderate-Negative regime, 84 trading days in state (entered 2026-06-30). Durable regime; readers should treat as neutral-to-slightly-bearish backdrop.
WHY THE SIGNAL IS HERE
After the 2025 LC breakout, the year-over-year rate of change in live cattle moderated through 2026. The signal picked up the moderation and shifted toward the cheap-beef side.
POSTURE
Modest neutral-to-bearish backdrop. On its own this signal does not drive sizing. Combine with faster inputs for tactical decisions.
WHAT THE CHART SHOWS
The composite sits at -0.891 in the Moderate-Negative band, 87 trading days running since June 30, 2026. Live cattle year-over-year rate of change has moderated after the 2025 breakout, which the signal reads as reduced retail-protein substitution pull on pork. The duration crosses the stability threshold but the historical state-conditional edge is modest (minus 0.76 points vs baseline). Treat as a neutral-to-slightly-bearish backdrop, not a tactical driver.
TOP INPUTS FIRING
- Primary composite -0.891 State Moderate NEG; running 87 trading days in moderate-negative since June 30, 2026.
- Raw z-score -1.74 Trailing 252-day percent change of CME Live Cattle front-nearby settlement, z-scored on a 504-day window with 126-day minimum, tanh-bounded. Positive reads expensive beef year over year.
- Signal strength Spearman IC plus 0.089 at h=60 (p=1.1e-16). Directionally correct but modest in magnitude. Best state-conditional edge is only plus 0.33 pp above baseline. Weak but well-identified cross-protein overlay; not a tactical driver.
THE TAKEAWAY
What this means for you today
THE CROSS-PROTEIN CALL
Beef and pork are weak retail substitutes. When beef is expensive year over year, retail buyers shift toward pork at the margin. The signal reads that cycle. Today the signal is on the cheap-beef side (reduced substitution pull), which modestly dampens the pork demand outlook.
THE MODEST-MAGNITUDE POSTURE
Unlike the dollar-export signal, this signal is modest in magnitude. The best state-conditional edge is +0.33 pp above baseline at borderline significance. The signal is useful as a slow cross-protein overlay, not as a tactical driver. Readers who size pork exposure based on this signal alone will see noisy outcomes.
THE HONEST CAVEAT
Feed-cost shocks (2012 drought, 2022 Russia-Ukraine) contaminate the pure substitution signal because corn drives up both cattle and hog costs. The 2020 pandemic-era paired entries delivered multi-decade-rare forward returns because lean hogs themselves were in recovery from the April 2020 crash; those readings are regime-specific and should not be used as representative.

Forward 60-day LH is measured from each run’s start date; a reader cannot trade off a start-date they only identify in hindsight, so this is a transparency log, not an alpha claim. Asterisked (*) returns are partial. The run is less than 60 trading days old. The full 60-day comparable fills in as more data arrives.
What this measures
Each trading day the first-nearby CME live cattle contract settlement price prints. The signal computes trailing 252-day percent change, z-scores on a trailing 504-day window with a 60-day minimum population, applies tanh. A positive composite reads expensive beef year over year. A negative composite reads cheap beef. The signal is a slow cross-protein overlay, not a tactical trigger.
Why it matters
Why beef prices matter for Lean Hogs at all
Beef and pork are weak retail substitutes. USDA ERS pork-beef consumption elasticity work and Elam-Preckel cross-price elasticity estimates place the long-run beef-pork retail cross-price elasticity in the 0.15 to 0.30 range. Not high; the two meats are weak substitutes rather than close substitutes. When beef is expensive year over year, retail buyers at the grocery counter, the restaurant chain, and the Mexican import warehouse shift toward pork at the margin. The signal reads that cycle through the live cattle year-over-year z-score as a slow demand-pull overlay on pork prices.
Why the magnitude is modest
The substitution effect is real but diluted at the futures-price level by three structural frictions. First, retail protein pass-through is slow and partial. Second, feed-grain cost shocks hit both cattle and hog markets simultaneously via the shared corn-feed cost structure, contaminating the pure substitution signal. Third, the live cattle year-over-year rate of change is noisy enough to pick up some cycle-timing error. The result is a Spearman IC of plus 0.089; statistically well-identified but modest. Best state-conditional edge is only plus 0.33 points above baseline.
How to use this signal today
Treat as a slow background overlay, not a tactical driver. The current moderate-negative reading says the recent live cattle moderation (after the 2025 breakout) is reducing the retail pork substitution pull; a modest headwind under the pork demand outlook. On its own this signal does not drive sizing. Combine with faster inputs for tactical decisions. The signal’s useful role is confirming cycle-direction over multi-month horizons, not generating entry triggers.
